Characteristics of Geracese EVO Oil

It is obtained from Grandi di Gerace (or Geracesi) olives. It is the typical cultivar of the Calabrian Jasmine Riviera and takes its name from the town of Gerace, one of the most beautiful villages in Italy. It is an oil with a predominance of sweetness and aromatic notes. From an organoleptic point of view, on the nose it reveals moderate, persistent fruity sensations, with predominant hints of olive leaf and grass. On the palate it shows a good sweet and enveloping structure, with levels of bitterness and spiciness that are not predominant. Dried fruit on the finish.

We harvest the olives both by hand and with mechanical methods and process them within 12 hours. The extraction of the oil takes place with a cold pressing, at a temperature below 27° as required by EU regulations. The extra virgin olive oil, thus obtained, is subjected to filtration after 30 days, using the filter press technique, and then decanted into vacuum-packed stainless steel containers at controlled temperature. With this method we keep the antioxidant enzymes present intact and, at the same time, increase the stability and quality of the oil.
